Sourced exclusively from the walled vineyard "Clos des Ursulines," a monopole owned by Domaine du Pavillon, this wine reflects the unique terroir and the estate's commitment to traditional winemaking practices. The vineyard, located at the southern extremity of Pommard near Volnay, benefits from calcareous clay soils with white marls. The 2017 vintage involved handpicking, fermentation in temperature-controlled conical oak vats for 18 to 21 days, and aging in oak barrels (20–30% new) for 14 to 16 months. Tasting Notes: Nose: Aromatic bouquet of cherry, blackcurrant, fig, violet, rose, and peony, complemented by delicate nuances of oak and spices.
